The first four beers were named after the four elements: Aqua, Aëra, Tĕrra, Fŏcus. When the elements ran out, Daniele looked up and carried on with the planets. Today the catalogue is a map of the sky, and it lives in a microbrewery in Fucecchio on the Via Francigena.

A brewery that started from the elements

Before it was a business, it was a kitchen. Ten years of home brewing are an apprenticeship that nobody recognises on paper.

Aries was born in Fucecchio, in the province of Firenze, along the route of the Via Francigena — halfway between Firenze and Pisa. The company was formed at the end of 2017 and production started in the summer of 2018. Behind it is Daniele Nespeca, «Daniele il Birraio», and with him Silvia: the two engines of the brewery.

Ten years making it at home

The path is the classic one of Italian craft brewing, but here it is longer than average: about a decade of homebrewing, then the specialist courses, and only afterwards the opening of the brewery. You do not move from passion to business because it is fashionable — you move when you have learnt enough to guarantee the same result twice in a row.

That is why a small microbrewery can afford a wide catalogue: whoever is behind it has already botched every brew there was to botch, at home and at their own expense.

First the four elements, then the sky

The names follow a system. The first beers take their names from the four elements: Aqua, Aëra, Tĕrra, Fŏcus. Then the repertoire widens and moves upwards — Jupiter, Venus, Mercurius, Saturnus, Neptunus, Andromeda, Ophiuchus.

The name of the brewery is in there too: Aries is the Ram, the first constellation of the zodiac. The criterion is so consistent that two beers have ended up with two names: Fŏcus is also called Mars, Tĕrra is also called Neptunus. It is a range that changed sky along the way.

The first sixty bottles were for Ruby and Raffaello

June 2018. The first beer comes out, Aqua. The first sixty bottles do not go on the shelf: they come out with a special label, dedicated to Ruby and Raffaello, a couple from Fucecchio who had been together for sixty years.

Sixty bottles, sixty years. It is the first gesture of a brewery only just born, and it already says everything about the kind of business it will be: one that knows the names of the people in the town where it works.

What is not done to this beer

The declared method is made of refusals. No additives. No preservatives. Unfiltered. Unpasteurised. And a formula worth quoting exactly as it is written, because it says something precise about the relationship between haste and quality.

Translated: maturation is natural and takes the time it needs. Refermentation happens in the bottle or in the keg, not in a pressurised tank. It is also the reason why there is a haze at the bottom of the bottle — that is live yeast, not a fault.

The stages, one by one

The company lists them without skipping any, and they all happen in house: selection of the raw materials, milling of the barley, mashing, separation of the wort from the spent grain, hopping, whirlpool, addition of the yeasts, primary fermentation in the fermenter and secondary fermentation in the bottle or in the keg.

«From barley to bottle» describes a company that contracts nothing out. For a microbrewery it means that every mistake is theirs and every credit is too.

Two and a half hectolitres, and four fermenters

The plant is declared and fits in three lines: a brewhouse with a two-and-a-half-hectolitre boiler, and four cylindro-conical fermenters, the last two of them recent arrivals. All stainless steel, all temperature controlled.

They are small numbers, and they should be read for what they mean. Two and a half hectolitres per brew means short batches, no stockpile, and the real possibility of making a single beer a single time — which is exactly what an industrial brewery cannot do.

On the Via Francigena

Fucecchio lies between Firenze and Pisa, on the route of the Via Francigena, and the brewery leans on it explicitly. But the real rootedness shows in the calendar: Salamarzana, the town's medieval festival; Monteluppolo in Montelupo Fiorentino; Autumnia in Figline Valdarno; the Beat Festival; an evening of pairings at the Osteria Montellori, a stone's throw from home.

Then there are the long trips — Artigiano in Fiera in Milano Rho, four editions done and the fifth in December 2026, Pitti Taste in Firenze, Artigianati in piazza Santa Croce. But the base remains the short round, the one where you pour the beer yourself and whoever drinks it knows you by name.

The line the brewery chose as its motto speaks neither of hops nor of prizes. It speaks of where the raw material comes from, and of what it is expected to become.

What is done by hand, on any given brew

Two and a half hectolitres at a time. Which means that every gesture is done again from scratch every week.

Mill and mash

It starts with the selection of the raw materials and the milling of the barley, then the mashing: the stage in which starch becomes sugar and the body of the beer is decided.

Separate the grain and whirlpool

Separation of the wort from the spent grain, then the hopping and the whirlpool, which removes the hop residues. These are the steps nobody ever talks about, and they decide how clean the glass will be.

Add the yeasts and wait

Primary fermentation in the fermenter, in temperature-controlled stainless steel. Natural maturation, without forcing the timing.

Referment in the bottle

The second fermentation happens inside the bottle or inside the keg. That is where the bubbles come from, and the veil of yeast at the bottom.

Distil what is left

From beer to spirit: Lupulus is a beer eau-de-vie, a BierBrand. Alongside it there are the beer and chocolate spread and the beer jam.

Load the van

Trade fairs, medieval festivals, festivals and village food festivals: the Aries stall goes up and comes down several times a year, inside and outside Tuscany.

Golden Ale, Red IPA, Belgian Ale, Porter, American IPA, Bitter, Weiss, Session and a Special with organic chestnut honey.

Aries beers contain gluten: they are made with barley malt and, on some lines, with wheat or wheat flakes. The ingredients and nutritional values of each line are published by the company.

The four beers born from the elements and those that came afterwards, when the names moved upwards. All unfiltered, unpasteurised, with natural refermentation in the bottle. Declared ingredients: water, barley malt, hops, sugar, yeast — plus wheat on some lines and organic chestnut honey on the Ophiuchus.
