It could sound like a slogan. It is simply the truest way to tell Sapori della Rocca.

In Campi Bisenzio, at the gates of Firenze, the family carries on a story born between the shop, the kitchen and the markets. Today the Tuscan specialities reach their customers through the stalls in the squares, the shop in via Castronella and the online shop, with delivery throughout Italy. At the centre of it all are the Ricette di Famiglia, where sauces, ragùs and soups are prepared following the family recipes, with the care of another time and a contemporary eye.

The family shop, first of all

Sapori della Rocca is the story of a Tuscan family, with roots going back to the end of the nineteenth century. It all begins in the family shop, a meeting place where goods were sold, wine was served and traditional dishes were cooked.

From the shop to the travelling stall

In the 1960s Mary, together with her husband Armando, takes that experience out of the shop on a mobile market van. From stops in front of the churches, their stall becomes little by little a fixed point in the markets and the squares between Prato and Firenze.

What they choose and what they cook

Alongside their own production the craft it all began with remains: selecting. For generations they have chosen Tuscan cured meats and cheeses one by one, for the stall and for the shop. Years in the markets have taught them to recognise the quality, the origin and the character of every product.

The range comes from these two skills meeting: one part takes shape in the family kitchen, the other from the experience of the selector. Two different ways of working, held together by the same care.

Eight markets, four mornings

The weekly calendar is the backbone of the business: four mornings, two mobile vans and eight markets in the squares between Firenze and Prato. Every evening the vans are loaded and, at dawn, the stalls go up in two different squares.

It is the kind of work that lets the family know its customers closely, listen to them and understand what they are looking for.

The Giardino di Famiglia

From mid-May to the first week of August the company opens its Giardino di Famiglia: an open-air space where guests can choose among several stands devoted to Tuscan food, from pinse to sharing boards.

Purchases are made with the Casina, the currency created for the Giardino. A simple and original way to spend the evening like one large family dinner, informal and convivial.

Fidati, l'è bono

The signature that goes with their products is pure Tuscan, and not for folklore: it is the phrase with which, at the stall, you really do persuade somebody to try something they have never eaten.

Behind it lies the hardest thing to build in this trade and the easiest to lose: that whoever buys trusts whoever sells, and comes back over the years.
