Starting again from an abandoned olive grove
An abandoned olive grove is a commitment somebody left half-finished. Taking it on again means years of pruning, clearing and patience before it gives anything back. It is the work that brought La Foresta into the world, and it is still its distinguishing trait: the business was not created to make land pay, it was created so as not to let it go.
That is also where the scale of the business comes from — it is small and it intends to stay that way: quantity is not the objective. Every product that reaches the stall has passed through the same four hands, with no departments, no convenient suppliers, no hurry.
