Milk never arrives the same

At the start, in the vat, there is a white liquid that looks identical to yesterday’s. That is an illusion. Milk can hold different proportions of water, fat, protein and mineral salts; it can react faster or more slowly to the rennet, form a firmer or a more fragile curd, and retain a different amount of moisture.

Some of that variation is natural. Some of it signals a problem in the raw material, in storage or in hygiene, and before any work begins the cheesemaker has to work out which of the two it is.

A recipe can be written down. The behaviour of milk has to be observed.

The work begins before the vat

Cheese is not born the moment the rennet goes in. It begins on the farm. The breed of the animals, what they eat, the stage of lactation, the season and the weather can all affect the composition and the technological properties of the milk, and they do not change only the aroma to come: they can change the coagulation time, the texture of the curd and the yield of the process.

In Pecorino Toscano DOP the link with the farm is written into the product specification. The cheese must be made with whole sheep’s milk from the defined area. The basic diet of the flocks must consist mainly of green or hay-dried forage from the natural pastures of that area, while feed coming from outside cannot exceed a set annual share.

These rules do not automatically turn every litre of milk into an identical product. They define where the material comes from and the system it has to be obtained within. Inside that perimeter the milk keeps changing, and the cheesemaker’s task is not to erase every difference: it is to stop variability from becoming instability.

The distinction is anything but formal. A cheese can carry the season with it without becoming unpredictable; it can express a different raw material without losing its identity. For that to happen, though, someone has to recognise which variations can be accompanied and which have to be corrected or ruled out.

The territory enters the cheese through the milk. The craft decides in what form it manages to stay there.

The product specification is not a recipe

Making Pecorino Toscano DOP is not a matter of taking Tuscan sheep’s milk and waiting for it to set. The specification lays down steps, temperatures, permitted ingredients, curd size, salting methods and maturing conditions.

The milk may be used raw or given a heat treatment up to pasteurisation. It may be inoculated with native, natural or selected starter cultures. It must be coagulated at a temperature between 33 and 38 °C, using calf or vegetable rennet, so that coagulation takes place within twenty or twenty-five minutes.

These are precise instructions, and they still do not amount to an automatic sequence. A temperature given as a range does not say which value to choose for a particular batch of milk. A maximum coagulation time does not by itself fix the exact moment when the curd has reached the firmness needed for cutting. Permission to use raw or pasteurised milk does not make the two processes equivalent.

The specification builds a corridor, and the cheesemaker has to walk it while taking one decision after another. There is no stepping outside the boundaries of the product, but no passive following of them either: the behaviour of the material has to be interpreted without turning interpretation into whim. This is where a procedure becomes a craft.

Coagulation is not simply making milk set

Once the rennet is in, the milk starts to change structure. The proteins organise themselves into a network that holds water and fat, and the liquid gradually becomes a gel. Seen from outside, the change looks almost motionless: the surface stays white and still. Inside the vat, meanwhile, the architecture of the cheese is being built.

The moment that structure is cut is decisive. Cutting the curd while the gel is still too fragile can break it into irregular particles and lose more useful material into the whey. Waiting too long can leave the structure holding too much moisture, or make it respond differently to the operations that follow.

Counting minutes on a clock is therefore not enough: what matters is how the gel has formed. The cheesemaker watches the surface, the resistance of the mass and the way it answers the first touch of the tool, and in a modern dairy that experience can be set alongside measurements of temperature, acidity and the other process parameters. Skill does not lie in choosing between the eye and the instrument, but in knowing what the two mean together.

Cutting the curd is designing the water

Once it is cut, the curd starts to expel whey: the process is called syneresis. Cheese is born through a subtraction, because part of the water and of the dissolved substances has to leave the mass so that what remains can gain firmness, stability and the capacity to mature.

Grain size is not a visual detail. Smaller particles offer more surface for the whey to escape through and tend to lose more moisture than larger grains, although the result always depends on how that interacts with temperature, acidity, movement and the length of the work. In Pecorino Toscano DOP the difference is made concrete by two images: for the soft type the curd is cut down to lumps the size of a hazelnut, while for the type destined for ageing the grains have to reach roughly the size of a grain of maize.

They are simple references, and they point to two different futures. A curd that keeps more water will produce a softer paste and will need maturing that fits that structure; a finer curd can lose more whey and build a more compact paste, suited to a longer maturing period.

For aged Pecorino Toscano the curd may also be given a heat treatment between 40 and 42 °C for ten or fifteen minutes. The heat does not cook the cheese in the ordinary sense of the word: it changes the way the grains expel whey and prepare to knit together in the mould. When someone cuts a slice months later, they are still meeting the consequences of those decisions. The texture was designed when the product did not yet have a rind.

The whey shows what has been kept

After cutting, the curd is separated from the whey and transferred into the moulds. It is easy to treat whey as nothing but the liquid to be got rid of, when it also reports how precisely the work was done. If the gel was cut badly or handled too roughly, curd particles and fat that should have stayed in the cheese can end up in the whey.

That loss is not only a matter of economic yield: it changes the composition of the paste and can affect the final quality. The cheesemaker therefore has to get enough whey out without destroying the structure being built.

Once the curd is in the moulds the drainage continues, and the Pecorino Toscano specification allows it to be encouraged by manual pressing or by steam heating. The curd starts to knit, takes on the profile of the mould and loses more moisture. What was a single volume in the vat becomes a series of separate wheels, and from that moment each one has to follow the same path without being exactly identical to the others. Working in batches does not remove variability: it turns it into a multiplied responsibility.

Salt is not there only for flavour

Salting is often told as the moment when cheese acquires flavour. That is true, but it is only part of what salt does. Salt contributes to the loss of moisture, influences microbial and enzyme activity and takes part in building the rind and the texture; it does not stay on the surface, but starts to penetrate the wheel and goes on distributing itself during maturing.

In Pecorino Toscano DOP salting may be done dry or by brining. Where brine is used, the specification fixes its concentration and sets minimum times in proportion to the weight of the wheel: at least eight hours per kilogram for the soft product and at least twelve hours per kilogram for the aged one.

Here too a number does not remove the need for control. The size of the wheel, the amount of moisture left in the paste and the condition of the brine all affect how the salt will enter the product. Uneven distribution can be hard to recognise straight away, and may show only after cutting, when the inside turns out to have a different texture or flavour from the outer part. Salting is short compared with the months of maturing; its consequences last far longer.

Affinage is not storage

When the wheels enter the maturing room the work does not end: it changes scale. The cheese loses more water and goes on changing, proteins and fats are modified by the activity of enzymes and micro-organisms, the paste changes texture, the rind develops and aromas that were not yet present in the milk gradually appear. The point is not to keep intact what came out of the vat, but to allow a controlled transformation.

The Pecorino Toscano specification calls for rooms held, during the maturing period, at temperatures between 5 and 15 °C and a relative humidity varying between 75 and 95 per cent. The ranges are wide because maturing is not one single condition held without variation.

The soft product must mature for at least twenty days, and the optional wording “semistagionato” (semi-matured) may be used after at least sixty days. The aged product requires at least four months; the wording “riserva” is allowed after at least eight months.

More time does not automatically mean more quality. A cheese designed to be eaten soft is not an unfinished version of the aged one: it has a different amount of water, a different structure and a different balance between sweetness, texture and aroma. Ageing is not a league table in which the oldest product wins: it is a destination decided while the cheese is being made.

Mistakes can wait before they show themselves

The cheesemaker’s craft carries a particular kind of risk: the consequences of a decision do not always appear at the moment it is taken. A curd can look regular when it goes into the mould and develop an unwanted structure later. A problem with acidification, moisture or salt distribution may become obvious only during maturing. A wheel can occupy space, energy and labour for months before the defect is fully recognisable.

At that point it cannot be put back in the vat and started again. The milk has been collected, worked and transformed, the whey has already gone, the salt has gone in, the reactions of maturing have taken place. The loss contains the whole path that came before it.

This is why control cannot concentrate on the finished product alone: it has to accompany every step, while there is still a chance to act. A cheesemaker’s competence is not measured only by the wheels that come out well, but also by the ability to understand why one has not.

In certified production that control also takes the form of a record. The most common image of the craft shows a person at the vat, the spino — the curd-breaking tool — sunk into the curd: the scene is real, but incomplete. For Pecorino Toscano DOP the inputs and outputs of the various production stages have to be monitored, and farmers, collection centres, dairies, affineurs and packers are entered in dedicated lists and made subject to the control system.

Inside the dairy the storage tanks must be identified, milk eligible for DOP production must be kept separate from milk that is not, and the movements of the raw material and the quantities produced must be recorded. This is not the part of the craft that ends up in photographs. It is, though, what makes it possible to reconstruct where a wheel came from, which milk was used and through which steps it reached the market. Traceability does not make the cheese taste better: it makes what is declared verifiable.

Instruments do not cancel the craft

There is a sentimental idea that the true craftsman should work almost entirely by hand, trusting experience and distrusting technology. In a dairy that idea would be dangerous. Thermometers, measuring instruments, refrigeration systems, controlled vats and adjustable maturing rooms do not replace the cheesemaker: they make it possible to know better what is happening and to reproduce safe conditions.

A thermometer takes nothing away from the hand. It stops the hand lying to itself. Experience remains indispensable, because an isolated figure does not automatically say which decision to take, but experience that refuses every check risks becoming mere habit. In the same way, a production run handed over entirely to parameters does not become intelligent for that reason: a value on a screen has to be read in the context of the material, the stage of the work and the product to be obtained.

The hand recognises. The instrument measures. The cheesemaker decides.

A recognisable wheel

By the time Pecorino Toscano goes on sale, the milk it came from no longer exists. It has lost water, changed structure and taken in salt, starter cultures and enzymes. It has become a soft or a compact paste, a rind, a weight, a wheel that can be cut, kept and recognised.

The customer sees the result; the cheesemaker remembers the sequence: that the wheel began in a batch of milk unlike all the ones before it, when the gel offered the right resistance, how finely it was cut, how it expelled the whey and what balance was built before maturing.

Cheese is not milk that has merely waited. It is milk that someone has given a structure, taken some possibilities away from and built a precise future for. Every wheel looks motionless, and inside it keeps the memory of decisions taken while it was still liquid.
