First blacksmiths, then farmers

The family’s first skill is iron. In a farming territory the blacksmith’s forge and the machine shop do not live at the margins of cultivation: they repair tools, adapt equipment and keep machines running through seasonal windows that cannot be put off. A breakdown at harvest weighs differently from a breakdown in winter.
Working on machinery teaches you to read loads, wear and consequences. A badly set component does not simply make a noise: it can lose time, damage the soil or ruin a harvest. Whoever repairs learns to look for the cause upstream of the point where the fault becomes visible, and to recognise that a wrong setting goes on costing even when the machine appears to be working.
The workshop stays in the family story as a school of cause and effect.
The contractor learns above all when not to go in
Before farming in their own right comes agricultural contracting. A business that works for others sees fields with different structures, slopes and management, has to arrive when it is needed and with compatible equipment, has to adapt depth and speed to land that is not its own. That experience widens the knowledge beyond its own boundary: it shows that a practice which works in one plot can be wrong a little further on, and it leaves behind a practical geography of soils.
Mechanisation makes it possible to work large areas, but it does not remove judgement. Speed, moisture, compaction and depth all affect the result, and the passage of a machine leaves a mark in the soil even when the crop will hide it. Knowing the machine means understanding when not to go in.
When the Bertoli move to farming they do not enter a foreign world: what changes is the position from which they take decisions. They are no longer only responsible for the efficiency of the machine, they become responsible for the agronomic outcome, for costs, for rotations and for the material that will reach processing. The machine is not the opposite of the land, it is a tool that has to be set according to the land.
From the 1980s Giuseppe takes on the farming risk
Growing a crop yourself means committing costs without knowing yield or final price. Seed, cultivations, fertility, weed control and harvest are decided while climate and market remain variables. From the 1980s it is Giuseppe Bertoli who leads this shift, according to the history published by the company.
Risk changes the nature of knowledge. Whoever owns the harvest cannot judge a cultivation only by the speed with which it is completed: the effects have to be watched across the season and into the following cycle, because one year’s productivity can consume a soil structure that will still be needed. Family farming is not automatically more prudent or more sustainable; it can become so when the intended lifespan of the business forces it to consider what comes after.
In the company’s account organic growing, rotations, green manuring and organic fertilisation are presented as a management choice, and they should be described for what they do: they build conditions, they do not guarantee every outcome. Calling a farm organic does not mean claiming that every process is free of impact or that no product is used. European organic production follows rules on practices, permitted inputs, controls, traceability and labelling, and certification ties the claims to documents and inspections.
For the consumer the logo can look like a moral summary. For the farmer it is also an operating system made of cropping plans, records, separation of products and dealings with the control body, where a contamination or an incomplete piece of documentation can have commercial consequences. Certification does not replace agronomy: it makes verifiable the frame within which agronomy is practised.
One hundred and fifty hectares are not one field
The farm gives about one hundred and fifty hectares under cultivation, besides the areas left as woodland. At that scale the field is not a unit: there are plots with different aspects, textures, drainage and histories, and sowings and harvests have to be ordered into a calendar that holds machines, staff and ripening together. The size makes it possible to produce quantities useful for pasta, but it makes keeping the varieties separate more complex.
Santa Luce lies in the Colline Pisane, in the hinterland of the Costa degli Etruschi, where the landscape alternates fields, olive groves, woods and the lake of the nature reserve. The farm describes alkaline, clay hill soils and attaches importance to the moist air arriving off the sea: these are the farm’s own observations, to be read alongside the agronomic data of the individual fields. A clay soil holds water and nutrients, but it can become difficult to work when too wet and hard when it dries; slope affects erosion and drainage; the maritime climate alters temperatures and humidity, and it does not act in the same way every year.
The territory does not certify quality by simple belonging. It sets a group of pressures to which variety and management have to respond, and knowledge comes from continuity: watching which plots hold up through a season, where a cover crop works, when the machine has to stop. The reserve is a reminder that production and habitat share water and space, and the wheat does not represent the landscape: it is one of its worked forms, subject to climate, agronomy and market. Pasta can speak of Santa Luce only if it keeps that precision and does not reduce the place to a picture on the packet.
Short-chain work, for that matter, is not necessarily simple: it removes some commercial steps and increases the ones the farm has to know directly. The field delivers grain, not packets. Between the two there are checks, transport, processing, tests and documents, and the point of running them is to make the story of the origin coincide with the real identity of the batches.
The wheat supply chain includes the years with no wheat in it
Growing durum wheat every year on the same land increases certain risks: a build-up of pathogens and weeds, nutritional imbalances, the loss of the agronomic opportunities other crops offer. Rotation breaks the cycles and spreads the demands made on the soil. The farm lists lucerne, sulla, clover, barley, oats, field beans and hay alongside the wheat fields: legumes can contribute to nitrogen availability through symbiosis with bacteria and leave different residues behind, and forage crops protect or structure the soil at other times of year. But a rotation is not virtuous because it contains a lot of names: it has to be designed around timings, outlets, water availability and objectives.
In green manuring a crop is worked into the soil instead of being harvested as the main product. The biomass adds organic matter and changes biological activity and structure, with an effect that depends on species, stage, soil and management. It is neither free fertilisation nor a gesture that is always the same: sowing a crop destined to be ploughed in takes time, space and resources, the moment of incorporation affects decomposition and the availability of the elements, and in the wrong conditions it can create difficulties in the cultivations that follow.
For a pasta that wants to be tied to its own wheat, growing something else looks like a detour. It is a condition instead. Quality does not begin with the semolina: it begins with decisions taken months before sowing and almost always invisible in the finished product. Telling the years without wheat as well makes the farming craft visible and stops the origin being reduced to the photograph of a ripe ear.
The variety is a decision, not a nostalgic label
Senatore Cappelli, Saragolla, Creso and Levante belong to different genetic and agronomic histories and cannot be treated as interchangeable names. The term “ancient grains”, often used in communication, is not a category sufficient to describe quality, adaptation or nutritional value: variety or landrace and provenance have to be stated, and measured data kept apart from reputations.
The choice of variety takes account of the length of the cycle, height, lodging, disease resistance, yield, protein and processing quality. A cultivar can offer an advantage in one environment and demand more attention in another, and blending varieties also changes the semolina. CREA maintains databases and research on durum wheat: sources that make it possible to place the names inside a technical history, without turning them into characters.
For the Bertoli the decisive test remains in their own fields and in the pasta that comes out of them. The same choice, for that matter, does not produce the same result in two different seasons. The seed carries a potential; management and season decide how it is expressed.
A field has to come up evenly before it can be harvested
Depth, seed rate, date and seedbed preparation affect emergence and competition. A field that comes up unevenly ripens at different times and makes harvesting harder: the machine has to place the seed in the intended condition, not simply cross the surface. Soil moisture and the forecast enter the decision but stay uncertain, and sowing too early or too late shifts the exposure to cold, to excess water and to the final heat. Family experience helps to read the signals, not to control the weather.
Months later, the grain has to reach conditions compatible with combining and storage. Moisture and ripeness are watched, but the window is set by the weather: harvesting too damp calls for drying and increases the risks, waiting too long exposes the crop to losses and deterioration. The setting of the combine has to limit breakage and impurities, and here the family’s mechanical memory returns clearly — forward speed, fan settings and threshing components have to be adapted to the crop in front of them. The machine can save or scatter months of work.
Each batch is then identified and protected. Grain goes on breathing and is vulnerable to insects, moulds and heating: cleaning, aeration and monitoring keep it until milling, because a silo is not a neutral store but an environment in which temperature and moisture can produce differences. The batches have to stay recognisable, and cleaning down the machinery between one lot and the next is part of quality too, even though it never appears in the harvest photographs.
For a small chain, storage has to reconcile capacity and turnover. Having your own wheat does not mean being able to process all of it at once: pasta production follows orders, shapes and availability, and storing well lets the yearly rhythm of farming meet a continuous commercial rhythm. The harvest closes the field and opens traceability.
The mill does not only grind finer
Milling separates and reduces parts of the kernel according to the product wanted. In its communication Pasta Bertoli speaks of the stone mill: the term describes a system, but quality depends on settings, temperature, cleanliness and the particle size aimed for. The stone on its own is not enough.
For semolina pasta the distribution of the particles affects hydration and dough. Milling that is too aggressive can heat the material, milling that is too uneven makes the work less predictable, and bran and germ, where they are present, change composition and keeping quality. These are differences the field does not decide on its own, and which the pasta plant meets on the day it works that semolina.
The chain therefore has to document who mills, in what conditions and how the identity of the batch is kept. As long as the farm’s own pasta plant remains a declared project, some stages are entrusted to outside facilities: this does not make the origin false, but it calls for exact words. Owning the wheat and controlling the recipe are not the same as having every machine physically on the farm.
The die does not repair a mediocre semolina
Italian law defines pasta made from durum wheat semolina and from durum wheat semolato, a less refined milling grade, and lays down requirements for production and for the name under which it is sold. These are rules that protect a shared language: what is sold as pasta has to meet the compositions and characteristics laid down. For an artisan producer the law is not the ceiling of quality, it is the floor; above it come raw material, particle size, dough, extrusion, drying and control, and declaring a variety or a method adds responsibility on top of the basic name.
Water and semolina are mixed until they form a homogeneous mass, and the recipe has to adapt to the real semolina, because seasons and varieties change absorption and hold. A pasta plant working the wheat of a single farm does not necessarily receive an identical material every year: it has to correct within controlled limits without erasing the character of the batch. The machine mixes, the operator reads consistency and figures.
The die gives the shape its section. Bronze tends to produce a rougher surface than some very smooth materials, but the effect depends on the dough, the geometry and the conditions: roughness increases the area in contact with the sauce, it does not on its own guarantee hold or flavour. Every shape creates different pressures and thicknesses, and pici — the thick Tuscan strand — penne and conchiglioni cannot share the same cycle without adjustments; cutting and exit have to be regular, because deformations at the start are fixed in place during drying.
Pasta Bertoli uses the bronze die as part of its identity, and the story holds when it ties that to the sequence instead of presenting it as a talisman. Pasta does not become better simply because it has a rough surface or a dark colour: every characteristic has to be connected to the process and to the cooking. The die does not repair a mediocre semolina or a badly run drying, it offers a surface that the stages before and after have to support.
Thirty hours are not enough to prove quality
Fresh pasta contains water that has to be brought down to the limits for keeping, and drying has to carry it from the inside outwards without creating excessive stresses. Temperature, relative humidity, ventilation, thickness and shape determine the path. This is the stage at which a shape that has come out well can still turn brittle.
The farm gives slow, low-temperature cycles of up to thirty hours. That is the figure of a declared process, not a universal threshold: length on its own does not prove quality and has to be compatible with hygiene, stability and structure. A badly run cycle can produce cracks even when it is long.
The narrative advantage of slow time therefore has to be translated into parameters. The pasta is checked so that it loses water evenly and keeps a consistent response in cooking, and the curve is not copied from one shape to another. Slow drying is not passive waiting: it is a technique that has to be verified shape by shape.
The final test, for that matter, does not take place in the pasta plant. The farm measures moisture, appearance and strength; the customer puts the pasta in water, and cooking time, evenness of thickness, starch release and bite check dough, die and drying together. A very rough pasta that falls apart has not kept its promise; a smooth surface can work well in another use.
Pici put the diameter to the test
Pici are a shape tied to Tuscany, recognisable for their thick section and their length. In dry production the difficulty lies in extruding, cutting, laying out and drying an element that tends to deform, and the diameter has to stay uniform enough to cook consistently. These are difficulties that involve the die, the cutting and the drying curve together.
Home tradition and packaged production are connected but different worlds. The hand gesture of “appiciare”, rolling the strand out by hand, cannot simply be imitated by a machine and declared identical: the pasta plant has to obtain a shape that is stable, transportable and compliant, while keeping its physical presence.
Pasta Bertoli puts pici in a wide catalogue. The shape works when it brings out the quality of the dough without becoming a regional caricature, and the territory enters through the section and the culinary uses. The craft consists in making them possible on a packet that will arrive a long way from Santa Luce.
A code does not create truth: it makes it possible to look it up
A batch of pasta should be linkable to semolina, processing and raw material. Traceability is not a linear story printed once: it is the ability to follow the records in both directions, from field to packet and from packet to field. The TrackIT project, cited by the farm, uses digital tools to make supply chain information accessible, and technology can increase transparency if the data at source are correct.
Knowing the place of cultivation, for that matter, is not enough to predict behaviour in pasta making. Moisture, protein, gluten index, colour, particle size and health status offer information closer to the process, and the values change between seasons and batches even on the same farm. Analysis is not there to build a school report to be published only when it is favourable: it is there to set milling and dough, to separate the batches and to recognise when a material does not reach the intended use.
A batch can be authentically the farm’s own and not suited to the same pasta as the one before. Origin must not become an alibi against control, and for the Bertoli this is the test of the declared chain: if the wheat is their own, the farm receives the consequences of its farming decisions directly and can connect them to the semolina, while an anomalous figure can lead back to harvest, storage or variety. Quality is not the claim that everything born in your own fields is excellent, it is the ability to recognise the differences and direct them responsibly.
Every outside step therefore has to be recorded without being hidden. A supply chain is short when distances and intermediaries decrease, not when the ones that remain are deleted from the story.
Losing the pasta in the last metre
The company page presents an assortment of forty-four lines across semolina pasta, egg pasta, flavoured pasta and other products. Every extension offers commercial possibilities and introduces complexity: ingredients, allergens, recipes, shapes, labels, stocks and cycles. Adding eggs, for example, changes colour, structure, taste and hygiene management, calls for controlled proportions and precise declarations, and changes how fragile the product is during packing and transport.
Alongside the pasta the farm presents oil and honey, which belong to the same farming reality but follow processes, rules and seasons of their own: oil calls for quick harvesting and crushing and for protection from light, oxygen and heat, honey depends on bees, flowering, moisture and extraction. For each of them origin and batch have to stay legible. Saying “ours” requires specifying what is actually produced on the farm and what is selected, and in a small business choosing what not to produce can weigh as much as adding a shape.
The packet then defends the pasta from damp, knocks and contamination, and has to keep legible the name of the product, ingredients, allergens, quantity, durability date, storage conditions, operator and batch. The graphics can tell Santa Luce, the fields and the family, but they should not turn pictures into proof: a photograph of ears of wheat does not certify a variety, the word “slow” does not stand in for parameters. A catalogue of very different shapes cannot give them all the same cooking instruction either: a useful label guides without pretending that every kitchen is the same. This is the point at which the voice of the farm meets a person who will never visit the fields, and it has to be precise enough to carry that distance.
Dry pasta can break during cutting, transfer, weighing, bagging or transport, and the brittleness and stresses born in the drying show up only when the pack is moved. Checking for crumbs is not only about appearance: it signals the strength of the shape and the effectiveness of the packaging. For a chain that has taken a year to produce the wheat, losing the pasta in the last metre is particularly expensive, and the mechanical work of the family returns here, in the setting of the lines and in maintenance. Packing is not the moment when farming ends, it is the moment when it has to manage to travel.
The iron does not disappear, it changes function
In 2006 the old workshop becomes Agriturismo La Ghiraia, a farm stay. The space of the first craft is reused to receive people inside the farm, and the change is not only a matter of building: it puts the family story in a place that can be visited. The agriturismo links accommodation, landscape and products, it can convey the scale of the fields and the distance between sowing and table, but it also risks reducing farming to a backdrop, and its credibility depends on the ability to keep the real work visible beyond the guest’s experience.
The workshop that repaired machines becomes in this way a point from which to look at the fields those machines worked. The material continuity of the building makes the story more precise than a set built for the purpose: the iron does not disappear, it stays in the previous function and in the way the family has learned to convert its structures instead of abandoning them.
The family also states the aim of building its own pasta plant at Santa Luce, with the end of 2026 given as the horizon. Until the plant is operating, the figure has to be presented as a project: bringing it forward as a finished result would cancel exactly the transparency the chain wants to build. Taking processing in-house can reduce transport and increase control, but it calls for authorisations, food skills, machines, energy, maintenance and a large enough market. A pasta plant does not automatically close the chain: it opens a new business inside the business.
Before producing, it will be necessary to define capacity, priority shapes, staff, analysis, hygiene flows and maintenance, because bringing the machines to Santa Luce will not be enough if the organisation cannot sustain peaks, breakdowns and demand. The experience of the workshop offers a useful culture, not an automatic authorisation. The step would reunite the two lineages of the family, mechanics and farming, but narrative coherence does not stand in for economic verification: the future of the craft is told in the conditional until the first batch actually comes out.
Quality remains a verb
Pasta is not born at a single point. It is decided when a variety is chosen, when you wait before going in with the machine, when a batch is kept separate, when the mill is set, when the dough is hydrated, when the die is checked and when the drying curve is built. Every stage can keep or lose part of the work that came before.
The history of the company supplies a voice: blacksmiths, contractors, farmers, pasta makers. Agronomic, regulatory and territorial sources make it possible to place that voice without turning it into a general law. Santa Luce explains conditions, it does not guarantee outcomes; organic defines rules, it does not remove every impact; bronze produces a surface, it does not stand in for the semolina.
First blacksmiths, then farmers means following a competence that changes its object while keeping its attention on relations. From machine to soil, from grain to pasta, the family gradually takes on more of the steps. The value does not lie in owning everything, but in knowing exactly which decision is your own, which is entrusted to someone else and how the result can travel back to the field.
The cook enters this chain too. Keeping the pack away from damp, using enough water, tasting and draining at the right point are simple actions that can bring out or flatten a shape. The farm does not control the customer’s kitchen, but it can offer honest instructions and gather feedback: the chain closes commercially at the sale, technically it continues to the plate and, through the judgement of whoever eats, returns to the choice of the next shape and the next semolina.
It is a continuity close to the first workshop: a result is observed, the cause looked for, the setting changed. The craft changes material but keeps the method. Quality remains a verb: choose, check, correct, declare. And begin again, at every sowing, with no way of copying the year before.
Linguistic precision, in this, is already a form of control. Distinguishing what is grown, what is processed by partners and what is still a project lets customers and collaborators read the real chain, and it shows that the family can follow the boundaries of its own responsibilities with the same attention it uses to follow a plot or set a machine. When those boundaries change, procedures, labels and story will have to change with them.
That is how a supply chain grows without rewriting its own past.
