The cut begins before the edge

A knife can look finished and not be. The blade is polished, the handle is mounted, the pins have been levelled flush and the surface shows no interruption; if it folds, it opens and closes. Everything appears to be in its place already, and the thinnest line of the whole object is missing.

The edge is the point where the knifemaker takes the blade down to an almost imperceptible thickness, building the angle that will have to enter the material. But sharpening cannot correct whatever happened before it: it does not resolve badly treated steel, a blade that is too thick, an uncomfortable handle or an imprecise mechanism. It can only reveal them. A freshly sharpened blade can cut easily and lose its cutting ability fast, it can be hard and chip, it can hold its edge and still be unsuited to the gesture it was built for.

The craft is therefore not a matter of making a piece of steel sharp. It is a matter of deciding what kind of cutting that steel will have to withstand, how many times, and inside which object.

A town does not come from a legend

Scarperia has been identified with the making of edged tools for centuries, but the exact origin of the activity is not documented in any definitive way. One account connects it to the military role of the town, founded by the Repubblica Fiorentina — the Florentine Republic — in 1306 as a garrison along the Apennine roads; another traces it back to the farming needs of the surrounding countryside. It probably does not need a single origin: weapons, agricultural implements, scissors, table knives and working tools belonged to the same material world, that of a community which turned iron into necessary objects.

By the fifteenth century the town had already won a reputation for knives and other edged tools, helped by its position on one of the routes linking Firenze to the north, where goods, workers and buyers passed. In 1538 the Statuto dei coltellinai — the knifemakers’ statute — was drawn up, regulating production, the materials used, sale, and the relations between masters and workmen.

This detail changes the way the tradition reads. Quality was not left to the individual conscience of the craftsman alone: it was important enough to require shared rules, checks and professional responsibility. The Scarperia tradition does not begin as free artistic expression around a fire. It begins as an organisation of work as well.

Use comes before the material

There is no universal knife. A table knife does not face the same work as a kitchen blade, an agricultural knife does not need the geometry of a penknife, a serramanico — a folding knife — has to solve problems a fixed-blade tool does not have. Before choosing the steel, the knifemaker has to know what the object will have to do.

The intended use determines the length and thickness of the blade, the shape of the point, the profile of the cutting edge, the size of the handle and the relation between weight and control. It also sets how far the knife has to resist wear, bending, impact or contact with corrosive substances. A knife carried in a pocket has to close without exposing the edge; a kitchen blade has to give the hand room, run on the board and keep a coherent geometry along its whole length.

Historic production at Scarperia included folding knives, working tools, agricultural irons, flatware and table and kitchen cutlery. That variety says something simple: the shape is not born to make a brand recognisable, it is born to answer a gesture. Style arrives afterwards, and when it arrives before use the knife risks becoming a representation of itself.

The hammer is not a certificate

In the commercial story of cutlery the word forged has become an almost automatic guarantee. It evokes fire, the anvil and a blade born from the master’s blows, while blanked, cut or laser sound as though they belong to anonymous production. The reality is less comfortable: the craft cutlery workshops of Scarperia use different processes today, and if some blades are forged, others are taken from steel sheet by blanking or laser cutting, then machined, ground, heat-treated, sharpened, assembled and finished.

The method by which the initial profile is obtained does not by itself establish the quality of the knife. A badly forged blade does not become good because it passed under a hammer, and a blade cut from sheet does not automatically lose its craft value if the design, the heat treatment, the geometry, the assembly and the finish are governed with competence.

Tuscan legislation on artistic craftsmanship itself allows the use of equipment, individual mechanised stages and advanced technology: what it excludes is the entirely serial process, in which manual skill no longer intervenes in any substantial way. Craftsmanship does not coincide with the refusal of machines. It coincides with responsibility for the decisions machines cannot take on their own. The hammer can be a tool of the craft; it is not the craft.

Steel does not have a single character

Saying that a knife is made of steel is almost like saying that a piece of furniture is made of wood. Steels intended for blades can have different compositions and respond differently to heat treatment, to wear, to impact and to corrosion: even two blades of similar shape can behave differently during working and during use. The choice is not a matter of finding the best steel in absolute terms, it is a matter of finding a balance coherent with the object.

Greater hardness can help the edge resist wear, but on its own it does not guarantee better performance. If it is not accompanied by an adequate geometry and by a correctly obtained microstructure, it can raise the chance that the edge chips or that the blade answers badly under stress; in the same way, a steel able to take impact well may call for sharpening more often. Hardness, wear resistance, toughness, ease of resharpening and corrosion resistance have to be balanced against the intended use. The material does not offer a perfect solution: it offers trade-offs to be understood.

That character, in any case, is not yet decided when the blade is shaped. The steel has to pass through a heat treatment coherent with its own composition, and temperatures, soak times, cooling methods and the tempering that follows modify its internal structure. Quenching raises hardness through controlled heating and cooling, but a blade straight out of the quench can turn out excessively brittle and hold stresses: which is why the cycle normally continues with one or more tempering passes, which regulate the balance between hardness and toughness and make the structure more stable.

There is no universal temperature for quenching a knife. Every steel calls for its own cycle, and applying the same treatment to materials of different composition is not fidelity to tradition: it is a technical mistake. During this stage the surface of the blade can change colour, oxidise or distort, and an apparently straight line can come out of heat treatment with a stress that will have to be assessed and, where possible, corrected. Fire does not confer value because it is ancient. It confers properties when it is controlled.

The edge is a geometry

Sharpening does not mean rubbing the blade on a stone until it starts to cut: it means building a profile. Before the edge there is the bevel, the inclined surface that carries the body of the blade towards the cutting edge, and its angle, its regularity and the thickness left behind the edge influence the force needed to enter the material. A very thick blade can have an apparently keen edge and go on resisting immediately after the first contact; an extremely thin blade can penetrate easily and turn out too delicate for the work asked of it.

The final sharpening angle is a choice as well. A narrower angle can reduce cutting force, but it has to be supported by a steel and a geometry able to keep it; a wider angle can make the edge more robust and increase resistance during the cut. There is therefore no ideal number for every knife: there is an angle coherent with the blade, the material and the gesture.

In one of the historic cutlery workshops of Scarperia sharpening is described as a sequence of three passes by hand. It is not a universal rule, but it shows how wrong it is to treat the edge as a marginal last operation. Every pass removes a minimal quantity of material, and precisely for that reason every mistake becomes visible.

A folding knife has to move precisely

In a folding knife the cut is only half the problem. The other half is the movement: the blade has to turn on its pivot, come down into the handle and stay in the position it is meant to hold, and depending on the model springs, liners, spacers, bushings and different stop systems come into play — slipjoint or locking. If the assembly is too tight the knife becomes hard to open; if it is too loose the blade can pick up side play; if the components are not aligned, the edge can graze the handle as it closes or the blade can sit off centre. They are minimal defects to the eye, and in use they are immediate.

The knifemaker therefore has to work to very small tolerances without turning the piece into an inert object. Enough room has to be left for the mechanism to move, and enough taken away for that movement to stay controlled.

Here too tradition does not coincide with an obligation to repeat every solution of the past: the Scarperia firms have introduced bushings, dismountable screws and contemporary materials to improve the action or make maintenance possible, while keeping historic profiles and models. A traditional knife can keep a shape and improve the way it works.

The handle does not dress the blade

The handle is often described through its material: horn, boxwood, olive, buffalo, stag, resin or other woods. But its task is not to decorate the steel. It has to transfer the force of the hand without creating pain, instability or pressure points, prevent the knife from turning during the gesture and allow the position of the blade to be recognised without looking at it. In a fixed-blade knife the tang extends the blade into the handle and can run through it entirely or occupy only a part of it; in a folding knife the handle has instead to contain the blade and take part in the working of the mechanism.

Every configuration joins the materials differently. The surfaces have to meet, the pins and the screws have to hold without splitting, the scales have to be thinned and finished without leaving steps against the metal parts. When natural materials are used the work becomes less predictable: horn does not present the same colour and the same structure every time, woods can have different grain, density and response to working, and heat, water and drying out can change them over time.

These variations produce pieces that are not perfectly identical, but they do not authorise approximate assembly. A gap between handle and metal does not become beautiful because the material is natural, a surface that hurts the hand is not proof of authenticity, a badly peened pin is not the craftsman’s signature. Variation belongs to the material. The defect belongs to the process.

The distinction counts even more when there is more than one piece. A knifemaker can make a unique example for a collector and can also produce six table knives that will have to be used together: in the second case the craft value does not come from every knife being visibly different, it comes from the ability to obtain six coherent objects without erasing the variations of hand work and natural materials altogether. The blades have to have compatible profiles, the handles have to offer a similar grip, and weight, balance and cutting ability cannot change radically from one place at the table to the next.

Repeating does not mean copying passively: it means keeping the essential decisions while the material goes on presenting itself differently. The result does not have to be identical. It has to be intentional.

The workshop was never silent

The romantic figure of the knifemaker shows him alone in front of the anvil, while the historic workshop tells a more complex story. Forge, bench, anvil, files, punches, grinding wheels and gravers belonged to a production made of different stages and different noises, and not everything was carried out by the same person, nor did all the work receive the same recognition. In the old workshop preserved at Scarperia there also appears the figure of the giratora: female labour employed to set in motion the wheel used for grinding the blades. Children could be put on the tasks considered lighter.

Recalling it does not serve to make the past more evocative. It serves to keep the word tradition from turning hierarchies, hard labour and invisible work into poetry as well. Today a cutlery workshop can divide the stages among several specialists or entrust a knife to a single craftsman, and both models can produce quality: the right question is whether whoever carries out one stage understands the consequences it will have on the ones that follow.

Nor is the recent history of Scarperia cutlery a continuous line of excellence. The Museo dei Ferri Taglienti — the museum of edged tools — has documented a period of stagnation in the 1980s, marked among other things by raw materials of modest quality and by standardised models with no professional research behind them; the revival that began in the second half of the 1990s drew in new craftsmen, families tied to the tradition, designers, better materials and a different relationship with design and technology.

Tradition is not preserved simply by going on producing: it is preserved by going on distinguishing what deserves to be handed down from what has to be corrected. A craft can survive on inertia and progressively lose competence, it can repeat historic shapes with mediocre materials, it can turn its own past into commercial decoration. Continuity is not enough. The know-how still has to be there.

At Scarperia the return to quality did not happen by rejecting every innovation: it happened by taking back control of the whole process and putting new tools at the service of an old competence. The tradition stayed alive because someone had the courage to admit that not everything produced in its name was good enough.

A knife continues after the sale

The edge wears. It is not an accident but a normal consequence of use: every contact with the material being cut, with the work surface or with maintenance tools progressively modifies the geometry of the cutting edge. A well designed knife has to be able to be resharpened: it will not last for ever regardless of how it is used, but the physiological loss of the edge was considered from the start.

Sharpening a blade again does not consist in recreating only the cutting extremity every time. As the years pass it can become necessary to work on the geometry behind it as well, so that the knife does not become thicker and thicker and more resistant to penetration. The handle and the mechanism call for maintenance too: natural materials have to be protected from long stays in water, from heat and from aggressive detergents, a folding knife may need cleaning or adjustment, and a damaged pin, screw or scale can be repaired when the construction of the object allows it.

Durability is not a magic property built into the price. It is a relation between design, construction, use and care. A craftsman’s knife is not worth something because it will not change: it is worth something also because it can change without immediately becoming waste.

The thinnest line

At the end of the process the edge remains. It is almost invisible, but it carries every previous decision with it: the intended use, the composition of the steel, the profile of the blade, the heat treatment, the thickness of the bevel, the sharpening angle, the balance of the handle, the precision of the mechanism.

When the knife enters the material, all these decisions arrive at the same point. The cut seems produced by a single line; in fact it is the result of an entire system. This is why the knifemaker’s craft does not begin in front of the grinding wheel and does not end when the blade becomes sharp.

It begins when someone decides what that object will have to be able to do. The edge is only the place where that decision can no longer hide.
